Brunch Challenge recipe: Chai Spiced Plantain Bread
In our efforts to raise awareness and funds for our nutrition programs, we started the EarlyBird Brunch Challenge. For the campaign, participants are encouraged to donate $5 to EarlyBird256 whenever they enjoy a meal. In addition to creating awareness for the nutrition challenges faced by the communities we work in. Our workshops teach children about the nutrition value of foods they have access to and the benefits of a balanced diet. That is why the recipes we will be sharing will be influenced by Ugandan cuisine. Some with a little twist.
The Chai Spiced plantain bread is a recipe by our squad member Ann who used plantains, a common delicacy in many cultures. Although it is usually enjoyed fried, we dared to do something different by baking a Chai Spiced plantain bread. Below are the ingredients. Try it and let us know how it turns out.
Ingredients
2 cups flour
1 tsp baking soda
½ tsp salt
¾ tsp cinnamon
½ tsp ginger
½ tsp cardamom
¼ tsp cloves
¼ tsp black pepper
¼ tsp nutmeg
½ cup brown sugar
¼ cup white granulated sugar
¼ cup butter, room temperature
2 large eggs
3 very ripe plantains (peel should be almost all black), mashed
½ cup buttermilk
1 tsp vanilla extract
Directions
Preheat oven to 350 degrees. Spray a 8”x4” loaf pan with cooking spray or line with parchment paper.
In a medium bowl, mix together the flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, black pepper, and nutmeg.
In a large bowl, mix together the brown sugar, white granulated sugar, and butter until blended. Add eggs one at a time and mix well. Mix in the mashed plantains, buttermilk, and vanilla. Add flour mixture in three batches and mix until just moist.
Spoon batter into the prepared loaf pan. Bake until the top is golden brown and a wooden toothpick inserted in the center comes out clean, about 60 minutes.
